Can we absorb 100% of the nutrients from the vegetables and fruits we eat? Plant nutrients like vitamins, minerals, and phytochemicals are encased within plant cells, protected by a fibrous cell wall. This barrier hinders digestive enzymes from reaching these nutrients directly.
