INGREDIENTS

Egg Yolks4 (80 g), Cooking Oil200 g, Lemon Extract450 g, Salt2 g, Sugar2 g, Mustard2 g

TIPAdd lemon to homemade mayonnaise to prevent the ingredients from becoming separated over time and allow for slower acidification of the mayonnaise.

METHOD

  1. 1. Beat the egg yolks in a bowl.
  2. 2. Add salt, sugar, and mustard.
  3. 3. Pour 100g of cooking oil. Be careful so that the egg mixture does not spread out.
  4. 4. Peel the lemon and blend.
  5. 5. Pour lemon extract (about 200g).
  6. 6. Mix the ingredients for 1.5 minutes with a whipper.
  7. 7. Pour the remaining 100g of cooking oil and lemon extract (250g) and slowly stir in one direction.
